Make sure it ain't movin'.
Clean but don't skin.
Stick carcass in boilin' water.
When hanks o' hair ken be pulled out, remove.
Scrape off hair and rinse a lot.
Don't forget ta remove the red glands in the back and unner the forelegs.
If the thing be fully grown, precook in a simmer o' water for 'bout a hour.
(Give it a poke to make sure it ain't movin'.)
Wipe dry and season inside with salt and pepper.
Stuff lightly with buttered crumbs mixed in with cooked bacon and onions.
Sew the thing up. (You'll know where to sew.)
Roast a 350 for 'bout one and a half hours while bastin' away on occasion with butter and Worcestershire.
(It won't be amovin' by then.)
6 to 8 servings.
