Grease three 9-inch round cake pans. Line bottoms with wax paper; grease the paper. Dust pans with flour, tapping out any excess. In medium bowl, combine flour, baking powder, baking soda, salt and nutmeg; mix well. In large bowl, using an electric mixer set on medium speed, beat butter until fluffy. Gradually add sugar; beat for 2 minutes. Add eggs 1 at a time, beating well after each addition. Stir in pineapple with juice. With the mixer on low speed, beat flour mixture and buttermilk alternately into egg mixture. Divide and spread batter evenly among prepared pans. Bake the layers until wooden picks inserted in centers come out clean, about 25 minutes. Transfer the pans to wire racks; cool for 10 minutes. Run a knife around side of layers. Invert layers onto wire racks; cool completely. Assembling the cake: Remove wax paper from cake layers. Use a toothpick to poke several holes in two cake layers; brush with rum. Place one layer on serving plate, rum side up. Spread with 1/2 cup filling. Place second layer on top of filling, rum side up. Top with remaining cake layer. Spoon whipped cream into a pastry bag fitted with a star tip; pipe a ring of whipped cream on top of the cake. Arrange pecan halves and pineapple chunks on whipped cream. Jell-O Instant Vanilla pudding 4 eggs 1/2 cup water -- cold 1/2 cup corn oil 1/2 cup Bacardi dark rum (80 proof) 1/4 pound butter 1/4 cup water 1 cup sugar 1/2 cup Bacardi dark rum Directions Butter and flour a bundt pan. Sprinkle the nuts on the bottom of the pan. Mix all cake ingrediebts together. Pour batter over nuts. Bake 1 hour at 325 degrees. Allow to cool. While still warm, poke holes in the cake with a wooden spoon. Using these ingredients: 1/4 lb. butter, 1/4 c. water, 1 cup sugar, 1/2 cup Bacardi dark rum, melt the butter, water and sugar together. Bring to a boil for 5 minutes stirring constantly. Remove from heat and stir in rum. Place cake on a serving plate. Pour over the warm cake...make sure it seeps in the holes. Bake at 350 degrees for 1/2 hour to 45 minutes, check and reduce heat to 300. Pour boiling coffee over dates and soda and set aside. Cream butter, egg and sugae. Stir in flour and salt. Fold in date mixture and nuts. Cook in loaf pan that is greased and with parchement paper on bottom, or in form pan. 325 for about an hour in loaf pan, less in form pan. Check with toothpick. She made the pies for the family restaurant at the rate of 20 or more a day for decades. When people came to dine they asked to have the pie they wanted reserved, before even considering the main course. My kids favorite is coconut cream pie. Even though they were only 10 when grandma passed away, they know my pie does not measure up to grandma's pie. She originally made her crusts with lard. But this was the recipe she used at the end. 3 cups flour (a little rounded) 1 tbls. salt 1 rounded cup Crisco 1 tbls. white vinegar 1 egg beaten water Put flour and salt in a large bowl and cut in Crisco. I usually use an electric mixer until it has the consistency of corn meal. Put beaten egg and vinegar in a measuring cup and mix in enough water to make 2/3 cup. Mix into the flour mixture. Yummmmmm -------------------------------------------------------------------------------- Orange Pecan Cookies Yield: 40 cookies 2 cups chopped pecans 2/3 cup sugar 2tsp grated orange peel 2tsp orange extract 3 beaten egg whites Preheat oven to 350. Lightly coat a baking sheet with canola oil. Place pecans in food processor until oily in texture. Add sugar, orange peel and extract and mix briefly by hand. Add egg whites slowly and mix by hand until a thin dough forms. Chill in refrigerator at least 2 hours Measure heaping teaspoonfuls of dough and place 2 in. apart onto baking sheet. It is easy and quick to make. Lemon Delight Pie One Pie Crust 1 Pkg of Lemon Pie Filling Mix (the kind that must be cooked) Container of Kool Whip or Dream Whip Bake empty pie crust at 350 until light brown about 10 minutes. Then let cool. Prepare lemon pie filling mix by the directions on the package. Then let the filling cool. Put 1/2 of the cooled lemon filling into the baked pie crust. Set aside one cup of lemon pie filling. Mix remaining lemon filling with 1 cup Kool Whip and pour into pie crust. Spread the set aside lemon pie filling into the pie crust. Spread Kool Whip over the top of the pie and refrigerate the pie. Slice cookie dough ~ 1/8 inch thick. Distribute evenly over surface of pan. Lightly press edges of cookies together to make a smooth crust. Bake at 375 for 12-15 min or until edges just begin to brown. Remove from oven & press crust litely with bottom of a custard cup to make a flat bottom & a ridge all around the edge to hold the filling. Place on wire rack to cool completely. Soften cream cheese. Blend in sugar & beat until fluffy. Whip cream. Add vanilla. Combine whipped cream with cream cheese until smooth. Spread evenly over cookie crust. Arrange fruit in circles on topping. Starting at the outside edge and working toward the center. The strawberries should be cut in half; the kiwi peeled, and sliced thinly; oranges peeled, membrane cut away and thinly sliced; bananas peeled and sliced; cherries, pitted and grapes seeded. Heat jam over simmering water or in the microwave. Press thru a sieve to remove pulp. Thin with orange juice or orange flavored liqueur. Use a small brush to litely coat all the fruit with this glaze. Refrigerate until serving time. I love sweet potato pie Jello Cake Need: box of whatever yellow or white cake mix you prefer flavor of jello you prefer Cool Whip Prepare the cake in sheet form following whatever the instructions on the cake mix box says Prepare the jello using the less water instructions like you were going to make Jello Jigglers Once the cake is cooled, poke holes all over the cake(I found using the wooden matches makes for the perfect size hole). Pour the jello slowly over the cake and allow it to fill the holes you made in the cake, refrigerate and allow the jello to set. Use the Cool Whip as frosting, cut and enjoy. Cook over boiling water until thickened, stirring constantly. Pour small amount of mixture over beaten eggs, stirring vigorously. Combine two mixtures, blend, return to double-boiler and continue cooking until mixture drops in thick sheets from a spoon. Add butter, lemon juice, stir in. Pour into baked and cooled 9-inch pie shell. Top with Meringue and bake in a 350 degree oven for 15 minutes or until light golden brown. MERINGUE 4 Tablespoons Sugar 1/4 teaspoon Salt 2 Egg Whites Beat whites with salt until they stand in soft peaks, add sugar one tablespoon at a time, beating well after each addition. This is copied from a previous posting, so just ignore the links if you know what Crisco is. Everything above the adding of the links is my mom's recipe as she typed it up. The rest is my comments. CHOCOLATE CHIP COOKIES CREAM: 1/2 cup SHORTENING, 1/4 cup GRANULATED SUGAR, 1/2 cup BROWN SUGAR, firmly packed, 1/2 teaspoon VANILLA until light and fluffy. FOLD IN: 1 EGG well beaten and beat entire mixture. SIFT: 1 cup and 2 level Tablespoons sifted FLOUR, 1/2 teaspoon SODA, and 1/2 teaspoon SALT. ADD: Sifted dry ingredients to creamed mixture and stir in 1/2 cup chopped NUTS (I use PECANS), 1 cup ( 6-ounces ) CHOCOLATE CHIPS (semi-sweet) and mix thoroughly. Drop by small teaspoons full onto a greased cookie sheet. Bake in a moderate oven, 375 degrees F. about 10 minutes. Yield: 50 cookies. These cookies are delicious. They have a very good taste with half shortening and half butter, but they stand up better and are crisper if you use all Crisco. I never make a single batch of these, I always double it. I only use 3/4 teaspoon salt in a double batch. It seems like if you double the batch, twice as much salt is too much. I have been making these ever since I married my husband almost 55 years ago and he loves them. I never grease a cookie sheet for my cookies, I feel the shortening in the cookies is enough, they never stick. It occurred to me that, of the ingredients above, "Crisco" might possibly be unknown to some of our international members. So here are three links. By the way, after over 50 years, my mom doesn't remember where she got this recipe. She thought it was the recipe that used to be printed on the bags of Toll House chocolate Chips. However, a few years ago the Toll House bags of chips once again carried what was called "The Original Toll House Cookie Recipe" and it was not like Mom's recipe. Mom actually made a batch of cookies using that Toll House recipe, and we all told her to go back to her recipe. So, by direct comparison, I proclaim my mom's cookies to be better than the famous Toll House cookies. And Famous Amos - if the bagged cookies I've had in the past are true to the original (which may be questionable) - isn't even in the same league. Oh, finally, take the word of the kid I used to be - the dough is great straight out of the bowl and they are fantastic right out of the oven and just (barely) cool enough to eat. Actually a poached egg secret also. Acid makes egg whites bind together. When poaching an egg add a little white vinegar to the water. When beating egg whites for meringue, add a pinch of Cream of Tarter before beating. My mother's recipe used corn starch and some grated lemon rind. Otherwise was very similar. I have never made a Lemon Pie. My kids always liked Coconut Cream Pie. My parents ran a restaurant and my mother baked all the pies. When I was little she would use some of her pie dough, sprinkle on cinnamon and sugar and bake me little cinnamon rolls. I am surprised I did not have a heart attack at age 10. back then she only used lard to make her pie crusts. She would bake as many as twenty pies a day. Her meringues were always perfect. Mine are not always perfect. One the customers favorite pies was called Lemon Delight. It was one of the easiest pies to make. It was made from lemon pudding from a package and Dream Whip. The first layer was just pudding, the second was a pudding Dream Whip mixture and the pie was topped with dream whip. That was the recipe I gave my stepdaughter last year. She wanted something to take to her mother's Thanksgiving dinner. I even took her to the market and helped her select the ingredients, which included a frozen pie crust. Easy was the name of the game, she was happy to have an easy pie to make. I heard she got complements. Not only on the pie, which she did make herself. But for taking the effort to bring a dish.
