1/3 cup lard (yes you heard right lard)
4lbs beef cut into 1/2 inch cubes
1 large onion chopped
3 cloves garlic finely chopped
1 cup drained canned nopalitos
12 serrano peppers seeded and chopped
3 cups (about 10) cut up fresh tomatillos
1 6oz can tomato paste
3 cups canned beef broth or fresh beef stock
1 1/2 tspns ground coriander
5 tspns ground cumin
heat lard in iron kettle (or large heavy pot) add beef about a pound at a time.as each pound is browned remove and set aside.after all the beef is browned and removed,add onion and garlic.cook until soft. return meat to pot add all other ingredients and bring to a boil. cover and reduce heat to low. simmer for 2 1/2 to 3 hours on low keeping a check on the liquids level(do not let it cook down to much) and add water as needed
